You can use any cut of chicken, or any other meat or vegetable - just adjust cooking times accordingly!
Ingredients
1kg chicken breast - diced
100g tikka curry paste
2 x 400g canned chopped tomatoes
4tbsp tomato puree
4 onions - finely sliced
30g butter*
200g natural yoghurt*
100ml double cream (optional)
*low calorie butter or alternative and fat free yoghurt can be used to achieve a lower calorie, lower slimming value dish - if not using the double cream, substitute for more yoghurt to achieve the desired consistency.
Method
In a large bowl, add 25g tikka paste to the diced chicken and mix well, leave this to marinate for a few hours or overnight for best results.
Heat oil in a pan and add the butter, once bubbling, add the onions and cook over a medium heat until softened and browned slightly.
Add the chicken and mix till combined, cook for 5 minutes, once the chicken has browned add the remaining curry paste and cook for a further 2-3 minutes.
Add the tomato puree, chopped tomatoes and 200ml water, cover and simmer for 15-20 minutes, until the chicken is cooked through and the sauce has thickened.
Add in the yoghurt or cream (or both) and stir gently till combined.
Serve hot with rice & naan.
