Perfect for serving up as a main meal, or side dish - a great way to use up leftovers!
We use leftover cooked white rice in this recipe, but you can make rice fresh, or use a microwave pouch.
Why not try changing up the chicken for beef, seafood or an alternative??
This can be made extremely low calorie by swapping out the oil for an alternative or low cal spray.
Ingredients
450g chicken breast - sliced finely
500g cooked white rice
2tbsp toasted sesame oil
30g chow mein glaze
3tbsp soy sauce
2 large eggs
1 large onion - finely sliced
200g frozen peas
100g broccoli - chopped
4 spring onions - finely sliced
Method
In a large bowl or container, add the chicken & glaze powder with a splash of water, mix well until the chicken is coated entirely and seta side to marinate for at least 30 minutes.
Heat sesame oil in a large wok and add the chicken, stir fry for around 4-5 minutes until browned and cooked through, remove and set aside.
Add more oil to the pan and add the onion, peas & broccoli, mix around for 2-3 minutes until they begin to soften.
Add the beaten eggs to the pan and stir immediately, allow to scramble slightly before mixing with the veg.
Add the cooked rice and soy sauce, mix well till combined and add the chicken, cook for 2-3 minutes until heated through, top with spring onions and serve.
