Often referred to in Greece as spanakopita, these bitesize pastries are perfect for serving up as part of your Easter lunch or packing into summer picnics.

Our version of these delicious pies are low in fat, packed full of nutrients and are a great healthier lunch option - have as part of a picnic or as a side dish, or serve up with grains & salad as part of a balanced meal.
With simple ingredients & an easy to follow method, these re great for beginners or even getting the kids involved!
Ingredients
500g baby spinach - chopped
6 spring onions - finely chopped
250g fat free cottage cheese - blended (or ricotta)
50g greek yoghurt
75g feta - diced
60g grated parmesan
1 egg - beaten
1tbsp cous cous seasoning
1tbsp minced garlic
1tbsp lemon juice
6 sheets filo pastry
Method
Heat oil in a pan, add the spring onions, and garlic, cook for 2-3 minutes until soft, add the spinach and cook until wilted.
In a large bowl, combine the cottage cheese, feta, lemon juice, parmesan and beaten egg, mix well till combined and add the cous cous seasoning, add salt & black pepper to taste.
Drain the excess water from the spinach mixture and add to the bowl, mix well until fully combined.
Lay a filo sheet flat and brush with oil/melted butter/alternative, and cut into 6 strips, place 1tbsp of the cheese mixture on the dough & fold to make a triangle shape, wrap following the strip of pastry and sealing at the bottom with butter/oil.
Brush the finished triangles with melted butter and place on a baking tray.
Cook for 10-12 minutes or until golden.
We bake these in the oven - but you could cook them in the airfryer!
