This can be made as chunky, or as smooth as you like! Roughly chop the veg and include larger chunks of avocado for a more textured avocado. Alternatively, for a smoother texture, mash the avocado before adding the finely chopped vegetables.

Ingredients
2 avocados, peeled, pitted & chopped
1tbsp lime juice
1 red onion, diced
1 large tomato, diced
handful chopped coriander (save some to garnish)
1tsp garlic, chopped
1/2tsp cayenne pepper
1/2tsp salt
Method
Add the avocado to a bowl with the lime juice, cayenne pepper, garlic & salt, mix to your liking.
Add in the other veggies and mix well.
Serve up alongside tortilla chips, salsa, cheese & your favourite toppings as a tasty snack!
Try adding chopped jalapenos, spring onion or different seasonings to make different varitions!
