Irish Beef Stew

A tasty beef stew with chunks of seasonal veg, perfect for St Patrick's day!

This can be made on the stove or in the slow cooker, see both methods below!

We've added Guinness to this recipe, but you can use without, just replace the quantity with water!


Ingredients

900g diced beef

2 large potatoes - peeled & chopped

1 large onion - chopped

2 carrots - chopped

2 stalks celery - chopped

1tbsp minced garlic

2tsp dried thyme

1 can Guinness

Fresh parsley - chopped.


Stove Method:

  1. Heat oil or alternative in a pan and sear the diced beef until browned all over, remove and set aside.

  2. In the same pan, add the celery, onion and carrot until softened, add the garlic along with a pinch of salt & pepper, cook for a further minute.

  3. In a bowl or jug, mix the gravy as per pack instructions, substituting some of the liquid for the can of Guinness (optional).

  4. Add the meat & potatoes into the pan, add the gravy mixture and the thyme and mix well.

  5. Bring to the boil, reduce and simmer for around 30 minutes until the beef is tender.

  6. Serve and garnish with fresh parsley.


Slow Cooker Method:

  1. Heat oil or alternative in a pan and sear the diced beef until browned all over.

  2. Add the meat, vegetables, garlic and thyme and mix till combined.

  3. Mix up the gravy as per pack instructions, replacing some of the water for the can of Guinness, and mix well, pour over the contents of the slow cooker.

  4. Cook on high for 4 hours or low for 6-8 hours.

  5. Serve and garnish with fresh parsley.
