Mexican Beef Mince Burrito


A quick and easy, but delicious take on a Mexican favourite.

Packed to the brim with flavourful beef mince, rice, beans, salad & more!


Try using different meats (steak pieces, chicken, pork), seafood or alternatives to change this up a bit, add in cheese, veggies or different sauces! Why not try pairing with our homemade de arbol salsa recipe!

Recipe

Ingredients

  • 500g beef mince (turkey or pork would also be great!)

  • 500g cooked rice long grain rice (or microwave pouches are ideal)

  • 1 onion, finely diced

  • 30g burrito seasoning

  • 400g can chopped tomatoes

  • 400g black beans

  • 8 large tortillas

  • 1tsp lime juice

  • Salad (shredded lettuce, red onion, sliced chilli, jalapenos, sliced tomatoes)

  • Chosen toppings (Guacamole, Salsa, Sour cream, Cheese)

Method

  1. Heat oil in a large pan and add the onion, cook until soft before adding the mince, cook until almost browned.

  2. Add the burrito seasoning and cook for a further 2 minutes.

  3. Pour in the chopped tomatoes and simmer for 5 minutes, add the beans, along with the water and simmer for 20 minutes until thick.

  4. Heat the tortillas slightly and assemble to your liking, adding rice, meat mixture, salad 7 toppings, fold the edges and wrap tightly in foil to keep secure.

  5. Serve on it's own (ideal for lunch) or alongside salad, rice & veg.
