Ingredients
500g beef mince (turkey or pork would also be great!)
500g cooked rice long grain rice (or microwave pouches are ideal)
1 onion, finely diced
30g burrito seasoning
400g can chopped tomatoes
400g black beans
8 large tortillas
1tsp lime juice
Salad (shredded lettuce, red onion, sliced chilli, jalapenos, sliced tomatoes)
Chosen toppings (Guacamole, Salsa, Sour cream, Cheese)
Method
Heat oil in a large pan and add the onion, cook until soft before adding the mince, cook until almost browned.
Add the burrito seasoning and cook for a further 2 minutes.
Pour in the chopped tomatoes and simmer for 5 minutes, add the beans, along with the water and simmer for 20 minutes until thick.
Heat the tortillas slightly and assemble to your liking, adding rice, meat mixture, salad 7 toppings, fold the edges and wrap tightly in foil to keep secure.
Serve on it's own (ideal for lunch) or alongside salad, rice & veg.
