Made a batch of sausages and not sure what to do with them?
This classic dish is perfect for the cold weather - pair with mash for the ultimate comfort dish.
This is just as good with shop - bought sausages too, if you don't feel like making your own - skip to part 2 of the recipe for the casserole part!

Ingredients
800g pork mince
sausage casings (natural or collagen)
1 onion - sliced
4 medium carrots - roughly chopped
600g potatoes - roughly chopped
400g tin chopped tomatoes
200ml vegetable stock
3tbsp tomato puree
1tsp mixed herbs
2 bay leaves
Method (part 1)
Add the minced meat & sausage mix to a large bowl and combine, add 100ml cold water and mix thoroughly, the mix should be well binded.
Fill the sausage meat into casings using a sausage stuffer - use a little oil on your hands to make this easier.
(part 2)
In a large pan, add 1tbsp oil and cook the chopped onion until soft, remove and add to the slow cooker, add the sausages to the pan and brown for 4-5 minutes.
Add the potatoes, carrots and chopped tomatoes to the slow cooker along with the herbs, stock and tomato puree, mix well.
Add the browned sausages in to the slow cooker and cover, cook on high for 5-6 hours or low for 7-9 hours.
