A tasty vegan dish packed with middle eastern spices - ideal for serving up as a side dish, starter or paired with rice.
Using our baharat spice to add a punch of middle eastern flavour, and topped with tahini and dukkah mix - this is a real treat.

Ingredients
1 large cauliflower - chopped
2 tbsp olive oil
1tbsp dukkah mix
80g tahini paste
2tbsp lemon juice
2 garlic cloves - crushed
Method
In a large bowl, combine the cauliflower, seasoning and olive oil, mix well and add a pinch of salt (optional).
Add to a baking tray and roast for 35-40 minutes or until cooked through and golden, turn over halfway for even cooking.
In a smaller bowl, combine the remaining ingredients with a pinch of salt and black pepper, mix well with a fork or whisk until lump free, slowly add water while mixing until a smooth dressing is formed.
Add the roasted cauliflower to a large bowl or tray, drizzle with the dressing, sprinkle with flaked salt and dukkah mix.
Serve with rice, cous cous or in a tasty flatbread.
