Vegetable Stir Fry


This brilliant dish is completely customisable! We have used rice in this recipe but feel free to switch it up for egg noodles, rice noodles or even cauliflower rice!


Using our oriental stir fry seasoning packed with coriander, garlic, ginger & leek it makes taking your stir fried veg, meat or alternative to another level!


If you want to make this recipe vegan - try using flaxseed instead of egg!

Add 1tbsp flaxseed to 3tbsp water and allow to sit for approx 5 minutes, then use in the same way as you do an egg.

Ingredients

  • 250g microwave rice (long grain, wholegrain & brown rice are perfect)

  • 1 beaten egg or flaxseed egg

  • handful spring onions - chopped

  • 20g oriental stir fry seasoning

  • 100g pak choi

  • 50g spinach

  • 100g tenderstem broccoli

  • 2tbsp soy sauce

  • 1tbsp sesame oil

Method

  1. Heat 1tbsp sesame oil or alternative in a pan, add the tenderstem broccoli and cook for 2-3 minutes, add the pak choi and cook for a further 2 minutes.

  2. Add the seasoning & soy sauce, cook for a further 2 minutes.

  3. Add the rice and mix together until combined, add the spinach & cook until wilted.

  4. Add the beaten egg/flaxseed egg and leave for approx 20 seconds before mixing together, add the spring onions and cook for a further 2 minutes.

  5. Top with sliced spring onion & sesame seeds.

Try serving alongside your favourite curry dish or adding a protein source such as chicken, egg, seafood or a vegan alternative!
